Drying Requirements: Begin by considering your drying needs. You need to know the quantity of chili per batch and your requirements for drying time. For instance, for a Sri Lankan customer with a daily drying capacity of 15 tons of fresh chili, requiring completion within 24 hours.
Drying Method: Chili dryers operate through various methods, including air circulation, conduction, or radiation. The choice depends on specific needs and budget constraints. In this case, considering the customer's budget constraints, an air energy dryer is recommended, offering a 75% energy saving compared to traditional dryers.
Drying Temperature: The drying temperature for chili is crucial. Some chili requires lower temperatures to preserve flavor and color, while others might need higher temperatures for quicker drying. Setting the chili drying temperature at around 60-65 degrees Celsius is efficient for heat pump operation.
Drying Time: Drying time is a vital factor. Some dryers are faster, suitable for large-scale production, while others may be better for small-scale, slower production. Smaller chili might take around 20 hours for drying, larger ones may need 25 hours, and the longest may require up to 35 hours.
Energy Efficiency: Consider the energy efficiency of the dryer. Modern dryers, especially those with heat pump technology, offer improved efficiency and reduced energy consumption. The energy efficiency of heat pump dryers can reach around 3.5.

For the Sri Lankan customer, it was recommended to use 15 units of the DT300HD heat pump dryer, with each unit having a drying capacity of 1500KG, accommodating the customer's budget and actual drying requirements. The equipment is made with stainless steel trays and trolleys for food-grade safety.

It is the rainy season when chili are harvested. The autumn rainfall frequency is usually 70-80%, and even higher. In this situation, chili will soon mildew and rot if not dried in time. After a long time of research, we have developed a pepper dryer with many obvious advantages. Traditional dryers can only dry a small amount of peppers at a time but consumes a lot of energy, resulting in serious environmental pollution. Furthermore, they can’t guarantee the safety and the running cost is very high due to special care. The new-typed pepper dryer has higher thermal efficiency which is up to 400% and its operational cost is only one third of that of the gas or coal-burning dryers. How to dry peppers with DRYTECH dryer Drying chili by phase is the best practice at present. In the first phase, dry the pepper to reduce its moisture content from 75-80% to 50%, and then pile them up to sweat. In the second phase, dry the sweated pepper up. Piling pepper up for sweating is a very important step in the pepper drying process and has an great impact on quality and quantity of driedchili and drying time. chili becomes soft and inflated in the drying process. Piling chili up for sweating plays a great role in improving quality of dried pepper. It will force pepper oil to permeate toward pepper’s surface to make color of dried peppers uniform, red and smooth and to make water well-distributed. It only takes 20-40 hours to dry up chili(different chili size with different drying time), and the number of yellow chili is decreased. If not, it takes 45 hours to dry 1,000 kilograms of peppers at 55-65°C. Don’t stir chili too much in the second phase. Otherwise, damage rate will rise, resulting in decline of sales price. Drying time varies with the quantity and type of chili. |
